Andy Warhol's Campbell's Soup Can

Growing up, Tomato Soup and Grilled Cheese Sandwiches simply spelled COMFORT FOOD. I think my own children would make the same statement -- the perfect lunch (or supper) on a cold and wintery day. Andy Warhol even considered it art, lol. Honestly, I was long ago over canned soup and cannot have bread BUT I still enjoy what brings me the same comfort.

Ok, so I know that is the Boy Scout motto, but I have adopted it as my own. As a motto, it serves me well. Being prepared helps me stay on task and eliminates questionable decisions. I am writing all this for MY benefit. You see, it has been a KrAzY week.

I love magazines. Have since I was a teenager working in a local drug store and got to read all the mags on the news stand on breaks. Over the years I have subscribed to about every kind of magazine that there is. A couple years ago I made the decision to allow all my subs to expire. It was a good decision but sometimes I miss flipping thru a new issue and marking what recipes need trying. Last weekend I had a coffee date with a friend at a local shop and she brought me  a little gift -- the latest issue of Bon Appetit -- she GETS me.

I saw this GORGEOUS photo of this dish on Pinterest -- it was labeled Olive Oil, Garlic, Chives & Romano Cheese Mashed Cauliflower. I attempted to follow the Pin to it's source only to find that it lead to a photo site -- not a recipe site. I was able to track down the origins of the photo -- Goddess of Scrumptiousness (don't you just love that name?) and there was the recipe -- for Olive Oil, Garlic, Chives & Romano Cheese Mashed POTATOES.

Before I go any further, I decided that the first 2 weeks of this new year I was going to go back to the basics of my way of eating -- Atkin's Induction. That would get me on good footing after holiday eating. I don't stray too far from the net carb limits of induction ever -- I am a smaller stature person and 52 years old -- I have little in the way of tolerance for carbs so I generally stay to 20-30 net carbs per day. In induction I need to keep to 20 net carbs and avoid some of my more favorites non-induction friendly foods -- nuts, berries and seeds (with the exception of flaxseed meal). So many of my breakfast favorites are out.

I'm sure that you've heard the saying about necessity being the mother of invention -- this recipe is the proof. My need was a quick, hot meal -- one that would stick with me thru a couple hours of physical work -- but not something heavy AND most important, it had to be QUICK -- like 5 to 10 minutes quick because I needed to be out the door.
